  • 2 tbsp coconut sugar (or honey, reducing oil slightly if using honey)

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 2 large ripe bananas

  • 2 eggs (or flax eggs)

  • 1/2 cup avocado oil

  • 1 tsp vanilla extract

  • 1/4 cup blueberries

  • 1/4 cup diced peaches

  • Or swap blueberries and peaches for 1/2 cup Hu dark chocolate gems.

  1. Preheat oven to 350°F (175°C). Line a 9×5" loaf pan with parchment paper.

  2. In a large bowl, whisk together the almond flour, coconut sugar (if using), baking powder, cinnamon, and salt.
